Boulder has a lot of opinions about breakfast burritos. Green chile is basically a food group here, and the gap between a good burrito and a forgettable one is usually the quality of what’s smothered on top. A few places have figured it out.
If you’re grabbing one on the way somewhere
Santo on Alpine Avenue runs a grab-and-go burrito service from the patio on weekday mornings, for a few hours after they open. The restaurant itself is a proper New Mexican spot from Chef Hosea Rosenberg (it’s on the Michelin Guide), but the breakfast burrito situation is casual, fast, and worth going out of your way for. Eggs, potatoes, house green chile. Nothing complicated about it, and that’s the point.
When you want to sit down and take your time
The Village Coffee Shop has been doing diner breakfast the same way for a long time. The burrito comes smothered, the coffee gets refilled without asking, and nobody’s rushing you out. It’s not the kind of place that needs a lot of explanation. You’ll either get it immediately or you won’t, and the regulars in there every morning definitely do.
North Boulder has its own version
La Choza is up in North Boulder and doesn’t get talked about as much as the downtown spots, which is a little strange because the breakfast burritos are consistently good. The chorizo option is the one most people who’ve been there before are going to order. The whole operation is unpretentious in the way that neighborhood places are when they don’t need to try.
When you want to build it yourself
Illegal Pete’s has been on Pearl Street long enough that some people forget it’s still there. The breakfast burrito is fully customizable, which either appeals to you or it doesn’t. Eggs, potatoes, beans, queso, green chile, you decide what goes in. It’s a reliable option when you’re eating with a group that can’t agree on anything, or when you just want something big and straightforward.
A note on timing: most of these places slow down considerably after the morning rush on weekdays. If you’re showing up midmorning on a Saturday, expect a wait almost everywhere on this list.
